Lebanese Meatballs (Falafel) Recipe :

  1. Add the cooked chickpeas, onion, garlic and parsley to a food processor and blend until all ingredients are combined.
  2. Pour the chickpea mixture into a suitable bowl and add flour, egg, black pepper, ground coriander and salt. Stir well with a spoon.
  3. Cover the top of the mixture with plastic wrap and let it rest in the fridge for about 1 hour.
  4. After resting, form small balls of the mixture the size of a walnut and roll them.
  5. Place the formed balls on a baking tray covered with plastic wrap.
  6. Continue to shape and roll the rest of the mixture in the same way.
  7. If you want to store the falafel in the freezer, you can leave them in the freezer for a few hours to freeze and then store them in a resealable bag. You can use this method to store the extra falafel or take them out and fry them when you need them.
  8. For the sauce, mix thick yoghurt, tahini, lemon juice and salt in a bowl until everything is well blended.
  9. It's time to deep-fry. Fry the falafel until nicely golden brown on the outside and use a slotted spoon to place them on a plate with kitchen paper to drain excess oil.
  10. The falafel is ready to serve. Enjoy your meal!
