Hmmm tasty and healthy, who wouldn't want that? Delicious for breakfast, lunch or a quick snack!

What you need (4 pieces):

  • 1 ripe banana
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract or cinnamon (optional)
  • Pinch of salt
  • (Coconut) oil for frying
  • Optional garnish: blueberries, chopped nuts, maple syrup, Greek yoghurt

How do you make the banana pancakes?

  1. Combine the banana, eggs, baking powder, vanilla extract (if using) and a pinch of salt in a bowl.
  2. Mix everything well until a smooth batter forms. If you want to keep some texture, you can choose not to mix the batter completely smooth.
  3. Heat a frying pan over medium-high heat n use a little (coconut) oil or butter to lightly grease the pan.
  4. Pour small portions of the batter into the pan to form pancakes (adjust the size to your preference) and fry the pancakes for 2-3 minutes on each side, or until golden brown.
  5. Serve the banana pancakes with a topping of your choice, such as fresh fruit, chopped nuts, Greek yoghurt, maple syrup or honey.
