Hmmm tasty and healthy, who wouldn't want that? Delicious for breakfast, lunch or a quick snack!
What you need (4 pieces):
- 1 ripe banana
- 1 egg
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract or cinnamon (optional)
- Pinch of salt
- (Coconut) oil for frying
- Optional garnish: blueberries, chopped nuts, maple syrup, Greek yoghurt
How do you make the banana pancakes?
- Combine the banana, eggs, baking powder, vanilla extract (if using) and a pinch of salt in a bowl.
- Mix everything well until a smooth batter forms. If you want to keep some texture, you can choose not to mix the batter completely smooth.
- Heat a frying pan over medium-high heat n use a little (coconut) oil or butter to lightly grease the pan.
- Pour small portions of the batter into the pan to form pancakes (adjust the size to your preference) and fry the pancakes for 2-3 minutes on each side, or until golden brown.
- Serve the banana pancakes with a topping of your choice, such as fresh fruit, chopped nuts, Greek yoghurt, maple syrup or honey.
